Turkey & Artichoke Ragout
Recipe Yield: 

Ingredients:
 
6 lbs.  turkey tender meat, raw, diced 1/2-inch
2 1/2 cups  leeks, julienne
3 oz.  garlic, minced
1 lb.  butter, lightly salted
10 oz.  flour
8 oz.  CUSTOM CULINARY GOLD LABEL TURKEY BASE
1 1/4 gal.  cream
1 qt.  artichoke hearts, canned, quartered
1 tsp.  white pepper
 
Instructions:
  • In a large braising pan, melt butter over medium high heat. Add leeks and garlic. Saute over medium heat 5-7 minutes, stirring frequently.
  • Add turkey. Saute over medium high heat until evenly browned, stirring frequently.
  • Add flour, mixing well. Cook 2 minutes over medium heat, stirring constantly.
  • Add cream and Custom Culinary® Gold Label Turkey Base, mixing well. Heat to boiling. Reduce heat and gently boil 10 minutes until mixture thickens, stirring frequently.
  • Add artichokes and white pepper, mixing well. Gently boil 3 minutes, stirring occasionally.
