Marinated Portabella Mushroom Salad
Recipe Yield: 

Grilled portabella mushrooms served over mixed greens, julienne carrots, water chestnuts, fresh julienne ginger and crushed spiced cashews, and tossed with an Asian dressing.
Ingredients:
 
2 caps  Portabella Mushroom, medium size, steamed, gilled
4 ounces  Mixed Greens
2 ounces  Carrots, julienne
2 ounces  Water Chestnuts
1 ounce  Ginger, fresh, julienne
2 ounces  Cashews, spiced
5 ounces  Pan Asian Oriental Dressing
 
Instructions:
  • Pour 1 ounce of Pan Asian Oriental Dressing over each mushroom and marinate for 1-3 hours. Shake off excess dressing.
  • Preheat grill to medium-high heat.
  • Grill mushrooms for three minutes on each side.
  • In a large bowl, toss the remaining ingredients with 3 ounces of Pan Asian Oriental Dressing.
  • Place greens on a large dinner plate and top with sliced, grilled mushrooms.
