Marinated Portabella Mushroom Salad
Recipe Yield:
Grilled portabella mushrooms served over mixed greens, julienne carrots, water chestnuts, fresh julienne ginger and crushed spiced cashews, and tossed with an Asian dressing.

caps Portabella Mushroom, medium size, steamed, gilled
|
|
4
ounces Mixed Greens
|
|
2
ounces Carrots, julienne
|
|
2
ounces Water Chestnuts
|
|
1
ounce Ginger, fresh, julienne
|
|
2
ounces Cashews, spiced
|
|
5
ounces Pan Asian Oriental Dressing
|
|
|
Instructions:
- Pour 1 ounce of Pan Asian Oriental Dressing over each mushroom and marinate for 1-3 hours. Shake off excess dressing.
- Preheat grill to medium-high heat.
- Grill mushrooms for three minutes on each side.
- In a large bowl, toss the remaining ingredients with 3 ounces of Pan Asian Oriental Dressing.
- Place greens on a large dinner plate and top with sliced, grilled mushrooms.
