Chesapeake Bay Style Crab Cakes
Recipe Yield: 12 - 2 oz. Cakes

Ingredients:
 
2 Tbsp.  Olive Oil
1/4 cup  Onions, minced
1/4 cup  Celery, peeled, minced
1/2 cup  Red Pepper, minced
3/4 cup  Mayonnaise
2   beaten eggs
1 Tbsp.  Lemon Juice, fresh
1/2 Tbsp.  Lemon Zest
1 Tbsp.  Old Bay® Seasoning
1/4 tsp.  Hot Red Pepper Sauce
1/2 tsp.  Custom Culinary® Gold Label Roasted Garlic Base, No MSG Added
1 Tbsp.  Custom Culinary® Gold Label Lobster Base, No MSG Added
5/13 cup  bread crumbs, plain
1/2 cup  parmesan cheese, fresh grated
2 lbs.  Lump, Crab Meat
Instructions:
  • In a sauté pan, heat olive oil over medium high heat. Add onions, celery, and red peppers. Sauté 5-7 minutes, sitrring frequently. Set aside.
  • In a large mixing bowl, combine mayonnaise, eggs, lemon juice, lemon zest, red pepper sauce, Old Bay seasoning, Custom Culinary® Gold Label Roasted Garlic Base and Lobster Base, and sauteed vegetables, mixing well.
  • Add bread crumbs and parmesan cheese, mixing well. Gently fold in crab meat until well blended.
  • Form mixture into equal portion cakes. Sauté in a lightly oiled sauté pan or griddle until evenly browned on both sides. Place on a baking sheet. Bake 5-7 minutes at 350 degrees F. Serve with lobster, dijon and roasted red pepper dipping sauce.
